Last night, it was a huge bake fest at my house. My sister & I started baking at 4:00 and we didn't finish until around 9:00. She baked pretzel rods for her coworkers. I will share her recipe below... And, I baked goodies for my advisory (homeroom) students, my husband's advisory students, my daughter's daycare, and the staff at our school (we had a potluck breakfast and lunch today).
I made cupcakes and used a new frosting recipe that I found on Pinterest. And, I must say, it was very yummy! Not overly sweet, which I like. I will share that recipe with you below too.
Holiday Pretzel Rods
Ingredients
bag of pretzel rods
bag of individually wrapped caramels
chocolate almond bark (milk chocolate, white chocolate, or both)
walnuts (optional)
sprinkles (optional)
wax paper
rolling pin
cutting board
Directions
1. Take the rolling pin, cutting board, and one caramel. Roll out the caramel until it is flat.
2. Take the flat caramel and wrap it around the top half of the pretzel rod. I suggest refrigerating these afterwards so they are easier to dip in chocolate.
3. Melt the chocolate in the microwave or in a double boiler. If you choose to use the microwave, make sure you gradually melt it. We checked ours every 30 seconds. It is really easy to burn or overcook the chocolate.
4. Dip the pretzel rods in the chocolate and lay them on wax paper to dry.
5. Immediately after placing them on the paper, sprinkle walnuts, sprinkles, or any other decorative food accessory to them. We drizzled a different type of chocolate over some of them.
6. After about an hour, the pretzels should be ready to bag as gifts or enjoy as a treat!
Holiday Marshmallow Fluff
Ingredients
4 egg whites
1 cup sugar
1 tsp vanilla
food coloring (optional)
*makes frosting for about 24 cupcakes
Directions
1. Combine egg whites and sugar in a double boiler and place on the stove. Heat until the sugar is completely melted and the mixture is hot.
2. Then, pour the mixture into an electric mixer and mix on medium for approximately 5 to 10 minutes. The original recipe I used said 3 minutes, but mine took a lot longer than that.
3. While mixing, slowly add the vanilla and food coloring (if you decide to use food coloring).
4. Once the mixture is ready, it will peak (if you dip a utensil in the mixture, it will form a peak without falling).
5. Optional: I placed the fluff in a Ziplock bag and cut one of the tips. It is a cheap way to make a piping bag.
